Dine Toulouse: Oh! la Vache

Tucked away down a side street off Place Wilson is an absolute gem of a restaurant that you simply must visit if ever you find yourself in Toulouse. Not only does it have a lovely ambience and warm, friendly staff, it also has an incredible menu of authentic French dishes – including some I had never had the pleasure of tasting before.

A small, cosy and contemporary French resto. Great lighting, smart decor, and a really cool way to store your bags – on metal luggage racks hoisted above the tables.

I arrived early and was treated to the perfect window seat – and a personal tour of the menu by the owner. He described in great detail how each of the dishes had been lovingly prepared and cooked. You could see his passion and enthusiasm came straight from the heart. It was a limited menu with just two starters and six main courses, but I found myself absolutely spoilt for choice. Imagine that! Eight dishes and I couldn’t decide which one sounded the most delicious. Finally I made my selection and I have to say, I was incredibly impressed when my dinner arrived at the table.

My starter was not for the feint hearted. Small duck gizzards poached (confit) in duck fat until they were melt-in your mouth tender, served with a green salad dressed in a rich balsamic vinaigrette. I’ve never tasted anything quite like it. It was exceptional. Truly sensational. Ten out of ten.

For my main course, I opted for fresh salmon. (The picture really doesn’t do it justice.) It arrived presented in a foil parcel with a julienne of leeks and carrots, enriched by an incredible stock and cream. Piping hot and bursting with flavour. To add to the culinary delight, it was accompanied by a homemade gratin of special dauphinoise potatoes that were perfectly cooked and seasoned with a hint of garlic. Another ten out of ten. Quite probably an eleven or twelve, if only that were possible. It really was that good.

I finished off with a cool and creamy façon Dame Blanche au coulis de caramel fin. I gave this dessert a nine as there was a touch too much Chantilly cream for my liking. Plus my eyes were bigger than my belly and by that time, I have to say I was flagging a little. I had just enough room for a strong espresso to perk me up for the short stroll across Place Wilson, before calling it a day and retiring to my hotel.
